How it’s done
Each step of our process is an artform, and together they are a whiskey-making symphony.
STEP #1
farmer
It all starts with 100% pure, locally sourced Irish grain & malt; a first step that defines the finished product.
STEP #2
malting
Our expert maltster steeps the malt in water, activating naturally existing enzymes. The malt then begins to sprout, breaking down proteins and carbohydrates, resulting in the opening of the seeds’ starch reserves.
STEP #3
mashing
Hot water is added to activate the malt enzymes that convert the starch into fermentable sugars. The result is a porridge-like mixture.
STEP #4
fermentation
Yeast is carefully added and the temperature of the “wash” is attentively watched. In the right conditions, the yeast eats the sugars and produces alcohol.
STEP #5
distillation x 3
Our master distiller slowly heats the wash until the alcohol evaporates. That vapor then travels through the lyne arm to an area that recondenses it into a liquid. This produces a high-proof distillate that is diluted with water to barreling proof.
STEP #6
maturation
Our grain distillate is poured into ex-bourbon barrels while our malt distillate is poured into sherry casks. A consistent climate helps the whiskey age properly in their respective vessels to create a truly magical liquid.
Step #7
Blending
Our master blender chooses only the best barrels, then combines the contents of them all at a proprietary ratio to create our incredibly smooth spirit.
STEP #8
bottling
Being bottled on the spot is a step that ensures we control the kind of quality we insist upon.
